- Put thawed shrimp in a bowl and coat with soy sauce. Let soak while preparing other ingredients.
- Bring medium/large pot of water to a boil. Add noodles turn off heat. Soak noodles about 5 minutes. Drain and set aside.
- Add 1 tablespoon oil to pan to coat. Heat oil just until beginning to smoke. Add chopped vegetables and stir fry quickly. Remove vegetables from pan and set aside.
- Remove shrimp from soy sauce. Add spices and corn starch to remaining soy sauce to make sauce. Stir well.
- Add remaining tablespoon oil to pan heat just until beginning to smoke add shrimp and stir fry just until cooked. Add soy sauce mixture. Stir quickly with shrimp until slightly thickened. Add vegetables and noodles. Stir to combine. Serve and top with chopped green onion.
