Directions
- Cook the pasta according to package instructions, reserving 1 cup of the cooking water before draining.
- In a 12-inch heavy skillet, heat olive oil over moderately high heat until hot but not smoking. Sauté the shrimp, turning once, until just cooked through, about 2 minutes. Transfer the shrimp with a slotted spoon to a large bowl.
- Crush the garlic cloves using a garlic press and add to the oil remaining in the skillet along with red pepper flakes, white wine, and salt and pepper to taste.
- Cook over high heat, stirring occasionally, for 1 minute. Add butter to the skillet, stirring until melted, then return the shrimp to the skillet. Remove from heat.
