Directions
- Bring a medium pot of salted water to a boil. Cook the orzo and broccoli according to package directions for al dente. Reserve about 1/2 cup of the cooking liquid (for original 4 serving recipe, 2 tbsp per serving) before draining, leaving broccoli and orzo in the colander.
- Add half of the olive oil to the pot over medium heat. Sauté half of the minced garlic until golden, about 30 seconds. Return the drained orzo and broccoli to the pot and stir to combine.
- Add half of the reserved cooking liquid, or more as needed, and cook for 1 minute, stirring.
- In a large skillet, melt the butter and remaining olive oil over medium heat. Add the remaining garlic and sauté for 30 seconds.
- Add the shrimp and season with salt and pepper. Cook for 2 minutes, then flip and add more salt and pepper. Cook for an additional 2 to 3 minutes, or until the shrimp are opaque and cooked through.
- Remove from heat and add a pinch of red pepper flakes, lemon juice, and fresh chopped parsley. Toss to evenly coat.
- To serve, divide the shrimp and sauce over orzo and sprinkle with Parmesan cheese.
