  1. Cook the rice according to package instructions.
  2. Heat one-third of the olive oil in a skillet over medium heat. Add the whisked eggs and cook for 1 minute, stirring to scramble, then transfer to a plate.
  3. In the same skillet, heat the remaining oil. Add the chopped red bell peppers and cook for 3-4 minutes until softened. Add the edamame and minced garlic, cooking for an additional minute.
  4. Add the shrimp and salt, cooking for 3 minutes until the shrimp turn bright pink.
  5. Return the cooked eggs to the skillet along with the rice, soy sauce, and sesame seeds. Cook for 2 minutes until heated through.
