  1. Beat the egg and cut the lemon into wedges.
  2. Tear the bread into small pieces and combine with the crab in a bowl. Add mayonnaise, Worcestershire sauce, 2 tablespoons of the beaten egg, and a pinch of salt. Mix gently but thoroughly, then form into 4 patties, each about 3 inches in diameter.
  3. Heat butter in a 12-inch heavy skillet over medium heat until the foam subsides. Cook the crab cakes, turning once, until golden brown, about 6 minutes in total.
  4. Serve the crab cakes with French fries and/or baby greens tossed with lemon vinaigrette.
