  1. Warm a nonstick skillet over medium-low heat; if your pan isn’t nonstick, lightly grease it before cooking.
  2. Place the coconut oil in a microwave-safe mixing bowl and microwave 15–20 seconds until fully liquid.
  3. Whisk in the eggs and vanilla until smooth.
  4. Add the sparkling water and salt; whisk to combine.
  5. Whisk in the almond flour and stevia until no lumps remain. Let the batter rest 2–3 minutes to slightly thicken.
  6. Scoop batter onto the warm skillet into 4–5-inch rounds. Cook until edges are set and the bottoms are golden, 2–3 minutes.
  7. Flip carefully and cook 1–2 minutes more until set through. Repeat with remaining batter and serve plain or with your preferred toppings.
