  1. Slice one onion and spread it in the bottom of a 5–6 qt slow cooker.
  2. Set the pork on top, then slice the second onion and scatter over the meat. Pour in the ginger ale. Cover and cook on LOW until the pork is very tender and easily shreds, about 8–10 hours (older/cooler cookers may take longer).
  3. Transfer the pork to a board. Strain and reserve the onions; discard the cooking liquid. Shred the pork with two forks, discarding any large pieces of fat or skin.
  4. Return the shredded pork and reserved onions to the slow cooker. Stir in the barbecue sauce, cover, and cook on LOW until the flavors meld and the mixture is saucy, 1–2 hours.
  5. Serve on buns or rolls with extra barbecue sauce on the side.
  6. Tip: For more even cooking, carefully turn the roast once during the first long cook, minimizing lid openings to retain heat. Leftovers keep well and reheat gently in the microwave or on the stovetop.
