Directions
- Toss the eggplant cubes with about half of the salt in a colander and let stand 30 minutes to draw out moisture; rinse and pat very dry.
- Drizzle the eggplant with the olive oil and toss to coat evenly.
- In a bowl, combine ground beef with the remaining salt, pepper, Worcestershire sauce, and mustard until evenly mixed.
- Press the beef mixture into the bottom and slightly up the sides of a slow cooker to form a thin layer.
- Layer the oiled eggplant over the beef. Pour in the diced tomatoes and tomato sauce, spreading evenly.
