Ingredients
Pork and beef chorizo
8 oz or 227g
Honey
1 tbsp or 21g
Directions
- Warm a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until it starts to brown, 3 to 5 minutes.
- Sprinkle in the cinnamon, coriander, cumin, paprika, and chili powder. Cook 1 to 2 minutes until fragrant, then transfer everything to the slow cooker.
- Return the skillet to medium heat and add the chorizo. Cook 1 to 2 minutes until it releases some fat, then add the red bell pepper, onion, garlic, and diced hot chili pepper. Sauté until the vegetables begin to soften, about 3 minutes.
- Stir in the tomato paste and the diced tomatoes with their juices and bring to a brisk simmer for 1 minute, scraping up any browned bits.
- Pour the tomato mixture into the slow cooker with the turkey. Add the chickpeas and honey, and stir to combine.
- Cover and cook on LOW until the flavors meld and the turkey is very tender, 6 to 8 hours.
- Taste and season with salt and black pepper.
- Ladle into bowls and garnish with shredded Mexican cheese, sour cream, and chopped scallions. Serve warm.
