  1. Warm a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until it starts to brown, 3 to 5 minutes.
  2. Sprinkle in the cinnamon, coriander, cumin, paprika, and chili powder. Cook 1 to 2 minutes until fragrant, then transfer everything to the slow cooker.
  3. Return the skillet to medium heat and add the chorizo. Cook 1 to 2 minutes until it releases some fat, then add the red bell pepper, onion, garlic, and diced hot chili pepper. Sauté until the vegetables begin to soften, about 3 minutes.
  4. Stir in the tomato paste and the diced tomatoes with their juices and bring to a brisk simmer for 1 minute, scraping up any browned bits.
  5. Pour the tomato mixture into the slow cooker with the turkey. Add the chickpeas and honey, and stir to combine.
  6. Cover and cook on LOW until the flavors meld and the turkey is very tender, 6 to 8 hours.
  7. Taste and season with salt and black pepper.
  8. Ladle into bowls and garnish with shredded Mexican cheese, sour cream, and chopped scallions. Serve warm.
