  1. In a heavy pot, cook the peas with water and one-fourth of the salt over moderate heat, covered, stirring occasionally, until heated through and tender, about 8 minutes.
  2. While the peas cook, cut the butter into 1/2-inch cubes. Combine the butter, mint, parsley, pepper, and the remaining salt in a bowl, mixing well.
  3. Pulse the cooked peas with the cooking water in two batches in a food processor until coarsely pureed. Transfer to a large bowl and stir in the herb butter until melted.
