Directions
- Preheat the oven to 350°F.
- In a small saucepan, bring 1 cup of water to a boil. Add quinoa, cover, and reduce to a simmer for 10-13 minutes until water is absorbed. Fluff with a fork and set aside.
- Heat a large sauté pan over medium-high heat. Add olive oil and diced onions, sauté until translucent, about 2-3 minutes.
- Add garlic and hot sauce to the onion mixture, sauté for 1 minute. Add ground turkey and cook until no longer pink, about 5-7 minutes.
- Mix in paprika, cumin, salt, pepper, fire-roasted tomatoes, black beans, corn, and fresh cilantro. Cook until liquid evaporates, about 4-5 minutes, stirring occasionally.
