Directions
- Wilt the spinach in a sieve or colander by pouring over boiling water. Drain and squeeze out excess water (you might need to let it cool for a while before you can squeeze)
- Mix all other ingredients in a bowl, don't be scared to add a decent amount of seasoning to bring out the flavor
- Spray two regular cereal bowls with oil or grease with butter and line each one with a tortilla
- Divide filling evenly between tortilla lined bowls, then place in oven and cook at 380-400F for 15-18 mins
- Once cooked remove from oven and take out of bowl. This dish is delicious either hot or cold.
