- Add olive oil to a large pan over medium heat. Once hot place chopped onions in and fry until they are caramelized, 10-15 minutes.
- Add ginger and garlic, and fry for 1 to 2 minutes.
- Add paprika, salt, and turmeric. Mix to coat. Add water and potatoes and let the potatoes simmer on low heat.
- When potatoes are fully boiled and water is almost dried, put roughly chopped spinach in and let cook for 7-10 minutes on medium heat. Enjoy!
