- On a sheet pan, toss the sweet potato cubes and halved, seeded poblano with about half the olive oil, taco seasoning, a pinch of salt, and pepper. Roast until browned and tender, 22 to 24 minutes, stirring halfway. When cool enough to handle, slice the poblano into strips.
- In a small pot, combine the sliced shallot, sugar, lime juice, and water. Bring to a boil, then remove from heat and let stand at least 10 minutes to quick-pickle; drain before using.
- Mash the avocado in a bowl with half the cilantro. Season with a squeeze of lime juice, salt, and pepper to taste; set aside.
