Directions
- Slice the onion and jalapeno, deseeding the jalapeno for less heat if desired.
- Heat half of the oil in a skillet over medium heat. Season the chicken breast with salt and pepper and pan fry for about 4-5 minutes per side until cooked through to 165°F. Remove from pan and set aside.
- Heat the remaining oil in the same pan and sauté the onions until translucent, about 3-4 minutes.
- Slice the chicken breast. Warm the tortillas for about 2 minutes until softened.
- Down the center of each tortilla, add sour cream, shredded cheese, sliced chicken, sautéed onions, jalapenos, salsa, and lettuce.
