  1. Start by heating a large skillet over medium-high heat. Add your sausage and brown it until cooked through. Once your sausage is completely cooked, remove from heat and place sausage in a bowl on a paper towel. Try to leave as much of the fat in the skillet as possible. Do not drain the fat from the skillet.
  2. Return the skillet, with the fat, back to the burner and add in your potatoes. Add 1⁄2 Tbsp of garlic powder, 1⁄2 tsp of Slap Ya Mama seasoning. Mix well and cook until browned. Taste, and add salt and pepper to your preference.
  3. Drain your diced tomatoes and add them to your potatoes. Mix everything together, and set aside.
  4. Spray a baking dish with non-stick cooking spray. Add in your cooked potatoes, then your cooked sausage. Lastly, pour in the carton of egg beaters. Distribute everything as evenly as possible.
  5. Place in the oven and cook on 375°F for 25-30 minutes, or until the eggs are almost cooked through.
  6. Remove the dish from the oven and line your slices of cheese evenly on top. Place back into the oven for another 5-10 minutes or until your eggs are completely cooked through and your cheese is melted.
  7. Once your casserole is done, remove it from the oven and let it rest for 10 minutes before cutting. Slice into 6 even squares and divide among your meal containers.
