- Start by heating a large skillet over medium-high heat. Add your sausage and brown it until cooked through. Once your sausage is completely cooked, remove from heat and place sausage in a bowl on a paper towel. Try to leave as much of the fat in the skillet as possible. Do not drain the fat from the skillet.
- Return the skillet, with the fat, back to the burner and add in your potatoes. Add 1⁄2 Tbsp of garlic powder, 1⁄2 tsp of Slap Ya Mama seasoning. Mix well and cook until browned. Taste, and add salt and pepper to your preference.
- Drain your diced tomatoes and add them to your potatoes. Mix everything together, and set aside.
- Spray a baking dish with non-stick cooking spray. Add in your cooked potatoes, then your cooked sausage. Lastly, pour in the carton of egg beaters. Distribute everything as evenly as possible.
- Place in the oven and cook on 375°F for 25-30 minutes, or until the eggs are almost cooked through.
- Remove the dish from the oven and line your slices of cheese evenly on top. Place back into the oven for another 5-10 minutes or until your eggs are completely cooked through and your cheese is melted.
- Once your casserole is done, remove it from the oven and let it rest for 10 minutes before cutting. Slice into 6 even squares and divide among your meal containers.
