Ingredients

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Sauté the diced onions and green bell pepper for 2-3 minutes until softened.
  3. Add the ground turkey to the skillet and cook for 6-8 minutes, crumbling the meat until fully cooked.
  4. Stir in the taco seasoning, half of the salt, and half of the pepper until well combined.
  5. In a medium bowl, mix together the salsa, corn, and black beans.
  6. In a large bowl, whisk together the eggs, milk, and remaining salt and pepper.
  7. Spray a 9x13 inch baking pan with non-stick cooking spray.
  8. Layer half of the meat mixture, tortilla quarters, half of the salsa/corn mixture, and half of the cheese. Repeat all layers except for the last cheese layer.
  9. Pour the egg mixture evenly over the layered ingredients and top with remaining cheese.
  10. Bake in the preheated oven for 45-55 minutes, or until the center is set and no longer jiggles.
  11. Serve the casserole topped with chopped cilantro and sliced avocado.
