Directions

  1. Season chicken breast with salt and pepper and set aside
  2. Heat a large skillet over high heat for two minutes. Add the oil and heat for one minute. Add the chicken pieces and brown on all sides one minute per side. Remove chicken from skillet and set aside.
  3. Using the same skillet, stirfry the rice over high heat for two minutes. Add the Diced tomatoes and green chiles and 2 cups of water.
  4. Bring the rice to a boil over high heat and arrange the chicken pieces over the rice. Reduce the heat to low, cover the skillet and cook for 20 mins until the rice is fluffy
