- Heat a medium skillet over medium heat and add half of the olive oil.
- Add the spinach and cook, stirring occasionally, until wilted. Transfer to a paper-towel-lined plate to absorb excess moisture.
- In the same pan, add the remaining olive oil and shallots. Cook, stirring occasionally, until soft, about 3 minutes.
