Ingredients
 Feta cheese Feta cheese- ½ cup, crumbled or 75g 
 Cheddar cheese Cheddar cheese- 4 oz or 113g 
Directions
- Chop the red onion and red bell pepper.
- In a non-stick skillet over medium heat, sauté the onion and bell pepper until soft.
- Add the spinach and cook until wilted.
- Whisk the eggs and pour them into the skillet. Cook until scrambled.
- Remove the mixture from the skillet and set aside.
- Place a tortilla in the skillet, sprinkle with mozzarella and feta cheese, then add the egg mixture.
