  1. Preheat oven to 375° and lightly coat a 14-inch oval casserole dish with cooking spray.
  2. Spiralize the carrots, turnips, and potato on the thickest noodle setting, trimming spirals into roughly 8-inch lengths.
  3. In a small saucepan, combine the half-and-half, milk, thyme, rosemary, and about one-fourth of the total salt. Bring to a gentle simmer over medium-low heat for 5 minutes, then remove from heat and let steep.
  4. Melt the butter in a large nonstick skillet over medium heat. Add the chopped onion and minced garlic; cook until softened, about 5 minutes. Season with the remaining salt and the pepper, add the ground turkey, and cook over medium-high heat until browned, about 10 minutes.
  5. Remove the herb sprigs/leaves from the warm milk mixture. Pour the infused dairy into the turkey and simmer 3 minutes to slightly thicken and coat the meat.
  6. In a large bowl, combine the spiralized turnips, potato, and carrots with the turkey-dairy mixture; toss until evenly coated.
