  1. Line an 8-inch square pan with foil, letting excess hang over the sides for easy removal. Soften the cream cheese to room temperature.
  2. Gently melt the unsweetened baking chocolate in the microwave in short bursts, stirring between bursts until smooth.
  3. In a mixing bowl, beat the softened cream cheese until smooth. Add the melted chocolate, stevia, and vanilla; beat until fully combined and glossy.
  4. Scrape the mixture into the prepared pan and smooth the top. Cover and refrigerate until firm, at least 8 hours or overnight.
  5. Lift the fudge out using the foil, cut into 16 squares, and serve chilled.
