- Boil sweet potatoes in water until fork tender, about 10-12 minutes. Drain, mash, and set aside.
- Preheat oven to 400°F.
- Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of oil to the pan and swirl to coat. Add onion, garlic, and jalapeño; sauté for 3 minutes.
- Add sweet potato, salt, and black pepper to the pan; sauté for 2 minutes.
