Directions
- In a medium bowl mix together pineapple, vinegar, water, teriyaki sauce and sugar. Set aside. Heat olive oil in a large skillet. Cut up chicken and season with salt and pepper. Cook in olive oil over med-high heat until no longer pink. Add pineapple mixture. Bring to a low boil and simmer for 10 minutes. Add chopped peppers and onion and cook until al dente, 5-10 minutes more. Serve over 1/4 cup cooked rice.
