  1. Thaw the lima beans and black-eyed peas. Trim and cut the green beans into 1 1/2-inch pieces.
  2. Fill a large pot with well-salted water and bring to a boil. Add the green beans and cook until just tender, about 5 to 7 minutes. Transfer the green beans to an ice bath, then drain and pat dry.
  3. Add the lima beans and black-eyed peas to the boiling water and simmer until tender, about 16 to 18 minutes. Drain and pat dry.
  4. While the lima beans and peas simmer, whisk together the lemon juice, salt, and pepper in a large bowl. Then whisk in the olive oil and scallions.
  5. Add the hot lima beans and peas to the bowl and toss well. Allow to cool for 15 minutes, then add the green beans and toss well.
