- Heat a 10-inch skillet over medium heat and coat lightly with olive oil. Place one slice of bread in the skillet. Layer two slices of mozzarella cheese on top, followed by the tomato slices. Sprinkle with salt and pepper, then add the remaining cheese. Top with the second slice of bread.
- Check the bottom of the bread; if golden, flip the sandwich. Place a cast iron skillet on top and cook for an additional 3 to 4 minutes until the cheese melts and the bread is toasted.
- Optional: Rub both pieces of bread with the cut half of a garlic clove before assembling.
- Optional: Add fresh basil leaves in the center of the sandwich with the tomato.
