- Cook pasta according to directions. Drain and rinse with cool water, and set aside.
- First, make the soup. Heat larger portion of olive oil over medium heat in a heavy saucepan. Add onions and garlic, and cook until onions begin to color.
- Add mushrooms and increase heat to high. Cook, stirring frequently, until mushrooms release their liquid. Continue to cook until some of the liquid has evaporated.
- Add flour, reduce heat to low, and cook for 2 minutes, stirring constantly and scraping the bottom. Pour in preheated almond milk, a little at a time, continuing to stir constantly. When all almond milk has been incorporated, increase heat to high and bring to a boil, still stirring constantly.
- Add smaller portion of salt (and pepper to taste), reduce heat to low, cover, and cook 10 minutes, stirring frequently. Remove from heat.
- Preheat oven to 350F.
- In a food processor, purée together tofu, mustard, onion powder, larger portion of salt, lemon juice, pepper, and paprika. With the machine running, add larger portion of olive oil slowly by pouring it through the feed tube in a stream. Transfer mixture to large bowl.
- Add prepared soup and tuna to mixture. Mix well, adding salt and pepper to taste.
