  1. Cook the brown rice according to package directions, then set aside.
  2. Warm a large soup pot over medium heat. Add the chopped onion, a pinch of salt and pepper, and the Italian seasoning with a splash of chicken broth. Cook, stirring, until the onion is translucent.
