  1. In a small bowl, combine the cayenne, black pepper, sage, salt, and ginger.
  2. Place the ground turkey in a large bowl and sprinkle the spice mixture over it. Mix by hand until the seasonings are evenly distributed.
  3. Lightly coat a large skillet with nonstick spray and warm over medium-high heat. Using a 1/4-cup scoop, portion the mixture into equal portions and flatten into patties about 1/2 inch thick.
  4. Cook the patties in batches until well browned, 3–4 minutes per side, adjusting heat as needed. Continue cooking until the centers reach 165°F.
