Ingredients
Directions
- Trim woody ends from asparagus, then cut asparagus and broccoli into small pieces. Pulse in a food processor until finely chopped (or finely chop by hand). Roughly chop the almonds and set aside.
- Heat a skillet over medium-high heat. Cook the bacon until crisp. Transfer bacon to one side of the pan and, if there is excessive fat, spoon off a little to leave a thin coating.
- Add the chopped broccoli, asparagus, and almonds to the skillet. If the pan looks dry, add the olive oil. Season with the salt and pepper, toss with the bacon, and cook, stirring, until the vegetables are crisp-tender, about 3–5 minutes. Serve warm.
