  1. Heat the oven to 300 degrees F.
  2. Grate the zucchini into a bowl and stir in the onion and eggs. Stir in 6 tbsp. of the flour, salt, and pepper
  3. Heat a large sauté pan over medium heat and add coconut oil in the pan. When the oil is hot, lower the heat to medium-low and add batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes in the oven.
