  1. Dice the bacon and thinly slice the potatoes.
  2. Heat a large skillet over medium-high heat. Add the bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and set aside.
  3. Add the Italian sausage to the skillet and cook until browned, about 3-5 minutes, crumbling the sausage as it cooks. Drain excess fat and set aside.
  4. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic and onion, and cook, stirring frequently, until the onions are translucent, about 2-3 minutes.
  5. Stir in the chicken broth and bring to a boil. Add the potatoes and cook until tender, about 10 minutes.
  6. Stir in the sausage and spinach until the spinach begins to wilt, about 1-2 minutes. Stir in the heavy cream until heated through, about 1 minute. Season with salt and pepper to taste.
  7. Serve immediately, garnished with the bacon.
