Directions
- Line a loaf or casserole pan with parchment paper.
- Purée frozen blueberries (no need to defrost) with 2 tbsp of the honey and the chia seeds, reserving 1 tbsp of the seeds. Set this aside to thicken for about 15-20 mins.
- While jam is firming up, make the base: Pulse the almonds, the oats, remaining 1 tbsp chia, and remaining 2 tbsp honey, the water, and the vanilla extract in food processor until well combined and sticking together. Press this base mixture down into bottom of the pan.
- Spread jam evenly over the base now.
- Freeze uncovered until firm. Can be eaten out of freezer or fridge!
