- Put the almonds in a bowl and cover with cold water. Let them soak for at least 8 hours, but you can let them soak for up to 48 hours if you like. Drain the almonds and rinse under cold water. Put in a blender with 4 cups of water and blend until liquified. Place a fine mesh strainer over a bowl and line with cheesecloth. Strain the almond milk through the strainer, using a spatula to press the ground almonds into the cloth. Once strained, transfer to a jar and store in the refrigerator. The remaining ground almonds can be dried out and used as almond flour. Note: Nutrition information for this recipes is incorrect, as it is for the entire batch of almonds, which are not used. The nutrient counts for the milk will be considerably less.
