  1. Boil the potatoes in a pressure cooker or pan until soft. Peel and mash them. Boil the peas in water for 5 minutes, then drain and set aside.
  2. In a bowl, combine the mashed potatoes, peas, half of the breadcrumbs, cornstarch, grated ginger, cilantro, chopped green chili, garam masala, chili powder, lemon juice, sugar, and salt.
  3. Mix to form a smooth dough-like mixture. Divide into equal portions and shape each into balls. Flatten each ball into a 1/2-inch thick patty and coat with the remaining breadcrumbs.
  4. Heat a non-stick pan or griddle. Drizzle oil in batches and cook the patties until golden brown on both sides. Serve warm.
