Directions
- Preheat oven to 350 degrees F. Prepare a 9x9 inch baking tray with parchment; set aside.
- Melt the dark chocolate and coconut oil over a hot water bath until homogenous.
- Mix 1 cup cocoa power with the almond flour, 1 tsp baking powder, and 1/4 tsp of sea salt.
- Blend 2 avocados with the dates and 1 tsp vanilla extract. When they are blended to a paste add 2 eggs and blend again. Pour in the melted chocolate, mix and blend once more.
- Pour batter into the prepared pan and spread it evenly over the bottom. Bake for 30-35 minutes until a toothpick comes out mostly clean. Remove from oven and set aside to cool.
- Frosting: Blend 1 avocado with 1/2 cup cocoa powder, 1/2 cup maple syrup, 2 tsp vanilla extract and a pinch of salt.
- Cover the baked cooled brownies with the frosting. Cut onto pieces and enjoy.
