  1. Preheat the oven to 400°F and prepare a large baking sheet.
  2. Zest the lemon, then slice it thinly. Trim and cut the asparagus into 1-inch pieces, and thinly slice the bell pepper and red onion. Chop the parsley and mince the garlic.
  3. Combine the asparagus, cherry tomatoes, bell pepper, red onion, olives, olive oil, salt, pepper, lemon zest, lemon slices, garlic, and parsley on the baking sheet. Toss to coat and arrange in a single layer, leaving space for the fish.
