  1. Preheat the oven to 425° and lightly coat two large rimmed baking sheets with cooking spray.
  2. In a large bowl, combine the chicken, asparagus, bell peppers, onion, carrots, and mushrooms.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, sugar, rosemary, thyme, sage, salt, and pepper. Pour over the chicken and vegetables and toss until evenly coated.
  4. Divide the mixture between the prepared sheets in a single layer, spacing vegetables so they do not touch the chicken to encourage roasting instead of steaming.
