Ingredients
Balsamic vinegar 3 tbsp or 48g
Honey 1 tbsp or 21g
Directions
- Heat a large nonstick skillet over medium-high heat. Add half of the spinach with a small amount of water and toss until most leaves are wilted, about 2 minutes.
- Add the remaining spinach in batches, tossing until just wilted but still bright green. Transfer to a strainer set over a bowl.
- Wipe the skillet dry if necessary. Add half of the olive oil and heat over medium-high heat.
- Season salmon with salt and pepper. Place in skillet, skin side up, and sear until brown, about 3 minutes. Turn fish and cook until just opaque in the center, 3 to 4 minutes. Transfer to a plate and wipe the skillet clean.
- Add remaining olive oil to the same skillet. Add chopped shallots, halved olives, and golden raisins. Stir for 1 minute.
- Add spinach and toss until heated through, about 1 minute. Season with salt and pepper.
- Mound the spinach mixture on plates and top with salmon.
- Add balsamic vinegar and honey to the skillet. Boil until reduced to a glaze, about 30 seconds. Spoon glaze over salmon and spinach and serve.
