Ingredients

Directions

  1. Preheat oven to 425 degrees F. Prepare a baking sheet with either parchement paper or a silicone baking mat.
  2. Add chopped cauliflower to a food processor and pulse until well ground.
  3. Place ground cauliflower in a microwave-safe bowl. Cover loosely and microwave for 4-5 minutes, or until softened. Remove cover and let cool.
  4. Once cool, squeeze as much liquid out of the cauliflower as possible with a tea towel or cheesecloth.
  5. Place squeezed cauliflower in a large bowl and mix in the eggs, 1/2 cup mozzarella, parmesan cheese, italian seasoning and as much salt and pepper to taste.
  6. Smooth cauliflower mixture into an even rectangle onto the prepared baking sheet, approximately 15x10 inches in size. Spray lightly with nonstick spray and bake for 12-15 minutes, or until golden.
  7. Spoon pizza sauce onto the crust and top with cheese, sliced tomatoes, turkey pepperoni, and basil leaves. Bake for another 3 to 5 minutes or until the cheese has melted. Serve immediately.
