- In a medium bowl, whisk together egg, egg whites, milk, cumin, coriander, salt and pepper.
- Heat a small frypan over medium-low heat and spray with olive oil. Add the egg mixture and scramble until cooked to your liking. Remove the eggs from pan and return pan to heat.
- Place the scrambled eggs in the middle of the tortilla and top with avocado, tomato, red onion, cheese and lime juice.
- Roll, folding the sides in as you go. Place the wrap seam-side down on the hot pan and cook for 1 minute to warm through. Serve.
