- Preheat the oven to 400°F. Pierce the sweet potatoes with a fork and place them on a baking sheet lined with parchment paper. Bake for 30 minutes or until easily pierced with a fork.
- Heat a pan over medium heat. Add oil, onions, carrots, garlic, scallions, and a pinch of salt. Cook until the vegetables are soft, about 8 minutes. Add spinach and cook until wilted. Remove from heat, let cool, and transfer to a medium mixing bowl.
- To the bowl, add shredded chicken, mayonnaise, hot sauce, and pepper. Mix well and adjust seasoning as desired.
