- Place a large skillet over low heat and toast the cashews, stirring occasionally, until fragrant and lightly browned, about 6–8 minutes; transfer to a bowl.
- Dice the chicken into 1-inch pieces. Cut the onion and green bell pepper into similar-sized chunks. Slice the mushrooms. Mince the garlic and ginger if not already prepped.
- Heat the olive oil in the skillet over high heat until shimmering. Add the chicken and cook, stirring occasionally, until just cooked through to 165°F and lightly browned, 4–6 minutes.
