Directions
- Wash then chop potatoes into cubes. In a pot, boil chopped potatoes with a pinch of salt
- While the potatoes are boiling, add chicken to a pan and season with salt, pepper and paprika. Cook well on both sides (till no longer pink/cooked) - set aside
- Add lettuce, chopped cucumber, spring onion and tomato into a bowl and mix in balsamic vinegar.
- Add cooked/softened potatoes to a bowl and mix with the cream cheese, salt and pepper. Top salad with potatoes and cooked chicken and top with chives and avo, enjoy!
