Ingredients

Directions

  1. Cook the fettuccine according to package directions, reserving some pasta water before draining.
  2. In a pot, bring the chicken broth to a boil over medium-high heat and add the chopped cauliflower. Cook until the cauliflower is soft, about 15 minutes.
  3. Melt the butter in a large skillet over medium heat. Add the minced garlic, chopped onion, cherry tomatoes, and chopped carrots. Sauté for 4-5 minutes until soft and fragrant.
  4. In a separate pan, cook the chopped chicken breast in oil over medium-high heat until cooked through to 165°F, about 7-12 minutes.
  5. Transfer the cooked cauliflower to a blender with about one-third of the broth. Add salt, nutmeg, and black pepper, and purée until smooth. Add more broth if needed. Transfer the purée back to the skillet with the sautéed vegetables.
  6. Add the heavy cream to the skillet and cook over low heat. Stir in the reserved starchy pasta water, Parmesan cheese, peas, and cooked chicken. Combine with the cooked noodles and serve immediately.
