- Cook the fettuccine according to package directions, reserving some pasta water before draining.
- In a pot, bring the chicken broth to a boil over medium-high heat and add the chopped cauliflower. Cook until the cauliflower is soft, about 15 minutes.
- Melt the butter in a large skillet over medium heat. Add the minced garlic, chopped onion, cherry tomatoes, and chopped carrots. Sauté for 4-5 minutes until soft and fragrant.
- In a separate pan, cook the chopped chicken breast in oil over medium-high heat until cooked through to 165°F, about 7-12 minutes.
- Transfer the cooked cauliflower to a blender with about one-third of the broth. Add salt, nutmeg, and black pepper, and purée until smooth. Add more broth if needed. Transfer the purée back to the skillet with the sautéed vegetables.
