- Preheat the grill to medium heat.
- In a saucepan, heat the coconut oil over medium heat. Add the garlic, chives, one-fourth of the fresh ginger, and one-fourth of the shredded coconut. Sauté briefly until fragrant.
- Add the coconut milk, lime juice, and black pepper to the saucepan. Cook for 1-2 minutes, stirring frequently. Remove the saucepan from the heat and allow the mixture to cool slightly.
- In a small bowl, combine the remaining ginger and shredded coconut.
