Ingredients

Directions
- Warm the olive oil in a large skillet over medium heat. Add the chopped ham and cook, stirring, until lightly browned and some fat renders, about 2–3 minutes. Transfer the ham to a plate, leaving the fat in the pan.
- Add the diced potatoes to the skillet and cook, stirring occasionally, until golden and fork-tender, 10–12 minutes. Reduce the heat if they brown too quickly.
- Return the ham to the pan. Stir in the heavy cream, ground mustard, garlic powder, salt, and black pepper. Reduce the heat to low and simmer, stirring, until the sauce lightly thickens and coats the potatoes, 3–5 minutes.
