Creamy Potato Soup

Ingredients

• Olive oil

  Salad or cooking

  1 tbsp or 14g

• Onions

  1 medium or 110g

• Garlic

  Raw

  4 cloves, minced or 12g

• Carrots

  Raw

  2 large or 144g

• Celery

  Raw

  3 stalk, medium or 120g

• Russet potatoes

  Flesh and skin, raw

  3 potato large or 1.11kg

• Soup, Swanson, vegetable broth

  4 cup or 880g

• Coconut milk

  Nuts, canned (liquid expressed from grated meat and water)

  1 cup or 226g

• Salt

  Table

  1 ½ tsp or 9g

Directions

1. Saute Carrots, Celery, Onion And Garlic In Oil until soft and then add in potatoes and veggie broth, simmer for about 15-20 mins
2. use an immersion blender or add into a conventional blender and blend ingredients
3. after blended add in coconut milk and salt to taste
