- Make several slits around the squash with a sharp paring knife to allow steam to escape. Place the squash on a microwave-safe dish and microwave on high for 10 minutes. Check for softness with a knife, cooking in additional 1-minute increments if necessary. Allow to cool, then cut in half, remove seeds, and scoop out the flesh.
- Preheat the oven to 400°F. Line a baking sheet with parchment paper. In a small bowl, whisk together 5 1/2 tbsp olive oil, miso, maple syrup, and mustard.
