  1. Toast cashews in a dry skillet over medium-low heat until golden and fragrant, about 2 to 4 minutes. Transfer to a plate to cool.
  2. Combine water, carrots, lentils, and 1/4 teaspoon salt in a saucepan. Bring to a boil, then reduce heat to low. Partially cover and simmer until lentils are tender, about 12 to 14 minutes. Drain and press out excess liquid. Transfer to a plate and let cool to room temperature, about 20 minutes.
  3. Heat 2 teaspoons of oil in a large nonstick skillet over medium heat. Add onion and cook until softened, about 5 to 8 minutes. Add garlic, curry powder, and 2 tablespoons water; cook for 1 minute. Remove from heat and let cool.
  4. Pulse cashews, lentils, and onion mixture in a food processor until cohesive but textured. Transfer to a bowl; stir in breadcrumbs, remaining salt, and pepper. Form into six 1/2-inch-thick patties.
  5. Cook patties in a nonstick skillet with 2 teaspoons of oil per batch over medium heat until browned and heated through, about 4 minutes per side. Serve in pitas with lettuce and cucumber.
